Chai - rhymes with pie - is a thick, milky spicy beverage native to India. Properly known as masala chai the beverage is a combination of black tea, milk, sweeteners and spices. The chaiwallahs of India combine black tea with masala, a combination of spices including cardamom, cinnamon, cloves, ginger and black pepper. They boil the masala mixture with milk, strain it, sweeten it and serve it piping hot - traditionally in little clay cups. The result, according to Diana Rosen, author of Chai, the Spice Tea of India, is fun - full of the unexpected taste sensations of fiery and sweet, soft and harsh. In spite of its contradictions Masala Chai is calming and delicious to enjoy by itself, with desserts, with a meal, or as the Indians do, with spicy savories.

Masala Chai tea is increasingly popular outside its native India and our Cha Cha Chai and Mandela Masala Chai reflect the Masala Chai tradition. Cha Cha Chai uses the traditional masala spices of cardamom, cinnamon and clove. Mandela Masala uses Cinnamon, Cloves, Cardamom and Ginger combined with African Rooibos tea.

Both blends make it simple to create an authentic, satisfying Chai tea. Simply brew the tea with almost boiling water, add milk (whole milk, sweetened condensed milk, evaporated milk, even soy or rice milk), sweetener (sugar or honey) and enjoy! The milk gives the Chai its traditional rich, creamy taste and the sweetener intensifies the flavor of the spices. It is not unusual to see Chai latte on the menus of coffee shops. Chai latte is simply a drink in which hot milk is combined with the masala chai blend instead of espresso. Serve Chai Tea with chocolate for an exceptional dessert or tea time.
